Today marks the start of “Better Breakfast Month”, which celebrates our morning meal and promotes healthy breakfast ideas. Egg safety is at the forefront of everyone’s minds right now after the massive product recall. I had to return 2 cartons of eggs to my local grocery store that were affected by the recall – some of which we had already eaten before finding out! Omega-3 Grade A Natural Large Eggs are a new product that Smart Balance just debuted, and according to their website, “Smart Balance Eggs are not involved in the current egg recall and are safe for consumption.” You can find up-to-the-minute information about the recent egg recall at the FDA’s website.
Smart Balance provided me with four free product coupons so that I could try these eggs for myself, but unfortunately they are not available in my area currently. However, the coupons don’t expire until 2015 (!!), so I’m sure I’ll be able to find them by then! Most mornings I scramble one egg with a slice of cheese on half a piece of toast. I top it with a tomato slice if we have one.

We rarely eat them for breakfast unless we’re traveling, then it’s an omelet or eggs Benedict. At home we eat scrambled egg burritos or scrambled eggs and toast about once a week for dinner. We round it out with a salad, some baby peas, or a Virgin Mary made with low-sodium V-8. Thanks for the cool offer!
