Dinner & a movie provided!
In honor of Taco Tuesday and the debut of the brand new LEGO Movie 2 teaser trailer that was released today, I found a fun little LEGO care package package on my doorstep today!

My package contained a taco kit and a copy of The LEGO Movie on DVD – dinner and a movie! The timing couldn’t have been more perfect, because no more than 15 minutes before it arrived, I had put a pork roast in my slow cooker for tonight’s dinner. Just the thing for pulled pork tacos!
Build Your Own Tacos, LEGO-Style
So this was another one of my gonzo recipes that turned out delicious, so I’ll explain how I made it. First, I took a roasting pork that about about 3.5 lbs and slit 3 holes into it, which I stuffed with 3 separate cloves of garlic. I then seasoned it with ginger, black pepper, and Adobo Light All Purpose Seasoning. I based it on my favorite, go-to pulled pork recipe with added inspiration from this recipe.
Then, just a few minutes later when this package arrived, I had a conundrum. The pulled pork would be perfect for tacos, but I had already seasoned it! So I decided to just add the taco seasoning packet on top of the other seasonings, along with about 3/4 cups water. I was concerned that the meat would be over-seasoned, but it actually turned out super tasty, so I was glad I had made the decision! I cooked the pork for roughly four and a half hours on high.
Once the meat was ready, I filled the taco shells and covered the pork with the taco sauce that was included in the kit. I then topped each taco with sour cream, green onion, and lettuce – which were the toppings I just happened to already have in the fridge. They were super tasty! In fact, you might say that all every taco is awesome…
