Tonight is the season premiere of Bachelor in Paradise, and I traditionally like to make a little charcuterie board whenever it’s Bachelor night. So I thought it would be fun to share one of the cheese boards I put together last season – I’m such a CHEESY Bachelor fan that I made a cheese ball inspired by BIP! GROOOOAAAAAAN.
As you will remember from my 14 Recipes For a Spooktacular Halloween Char-BOO-Terie Board post, I tried a cheese ball recipe that I saw on the The House for Hosting YouTube channel, and it was absolutely delicious. The first one I made was a Pumpkin Cheeseball for Halloween, and it was so good that I made another version of it in celebration of the Bachelor in Paradise premiere. This time, I left it in its original ball shape instead of adding rubber bands to make it resemble a pumpkin.
Paradise Cheese Ball
Ingredients:
16oz softened cream cheese
Ranch seasoning mix, to taste
2 cups shredded fiesta blend cheese
Chopped mini sweet peppers
Chopped green onion
Cocktail umbrella(For decoration)
Directions:
With gloved hands, thoroughly mix 1 cup of the shredded cheese with all of the other ingredients and begin to form into a ball. Put a large piece of cling film on the counter and sprinkle some of the remaining shredded cheese on it. Place the ball on top of the cheese and cover with the rest of shredded cheese; use the cling film to help guide and press the shredded cheese onto the ball to coat it as you wrap it up. Add a second layer of cling film, then put in the fridge overnight to chill. Add a cocktail umbrella for decoration when ready to serve.
This cheese ball is delicious with any of your favorite chips or veggies for dipping. On this particular occasion I served it with low-carb crackers, radish slices, celery, grape tomatoes, baby carrots, sweet peppers and pork rinds.
To decorate the rest of the charcuterie board, I took another idea from my Halloween Char-BOO-Terie Board and made a variation of my RIP Epitaph Cheese – BIP Cheese! I simply took a knife and cut out the letters freehand – so instead of writing RIP for Halloween, I wrote BIP for Bachelor in Paradise, using a small piece of pepperoni to dot the “I”! 😄
I rounded out the cheese board with a few of my favorite standards: A selection of olives, meats, and cheese; pickled onions; Caprese salad and port wine cheese spread.
For drinks, I made a cocktail in a homemade coconut glass that Jai made for me by cutting a coconut open with a band saw, hollowing it out, and turning the lid upside down and gluing it to the bottom to form a stem – click here to watch a video of Jai making it on my Instagram.
