No time to cook, but need a recipe with “Wow” factor – perhaps for an unexpected dinner guest? Then I present to you a meal I created tonight using just one pot and three ingredients!
I recently received a 1-gallon pail of Coconut Flakes from our friends at Tropical Traditions to review. In brainstorming what recipe I might make using it, I looked through what I had on hand and noticed that I had some shrimp in the freezer that was due to be used. A quick search on Tropical Traditions’ Free Coconut Recipes website yielded this recipe for Coconut Shrimp and Rice. I ended up adapting the recipe to use in a rice cooker, and the results were phenomenal:
Easy Coconut Rice & Shrimp Recipe
1 – 1 1/2 lbs frozen shrimp, thawed
1 cup of white rice
1 cup of shredded coconut
2 cups plus 1-2 TBSP. water
Salt and pepper to taste
Step 1:
Measure out rice and shredded coconut and place into rice cooker.
Step 2:
Pour thawed shrimp into rice cooker on top of the coconut-rice mixture.
Step 3:
Add 2 cups water and mix contents together with a large spoon. When I was pouring the shrimp out of the bag, some of the water in the bag poured out with the shrimps, which added roughly 1-2 tablespoons extra liquid.
Step 4:
Sprinkle with salt and pepper and cook.
Step 5:
Serve, and enjoy!
This meal has a fantastic combination of flavors – I love the contrast of the sweet coconut and fluffy rice with the delicious shrimp. When I was adapting Tropical Traditions’ Coconut Shrimp and Rice, Jai suggested adding the shrimp to the rice cooker instead of pan-frying them. It was a brilliant idea; the boiling water and resulting steam do a great job of cooking the shrimp. The best part is that it’s three ingredients, one pot, and no hassle! This would be great for a busy work night, or to serve to unexpected guests – the dish is decadent enough to be a “Company best” meal.

Oh dear, I LOVE the idea of using the rice cooker. Plus this dish is gluten and casein free which is a must in our household. I could see how you could keep this simple as the recipe above, or really spice it up for non-kid dining nights. Thanks for the ideas.
